Cakes
Some of you asked about the recipe for crazy cake. I have 2 recipes. Here is the one I used recently.
1 1/2 cups flour, 1/2 tsp. salt, 5 Tbsp cocoa, 1 tsp baking soda, 1 cup sugar, i tsp. vanilla, 6 Tbsp. oil, 1 Tbsp vinegar, 1 cup cold water. Mix and bake at 350 for 30 minutes.
This is a rich chocolatey, gooey heavy cake. I frost it with soft chocolate frosting. Recipe follows.
1 cup sugar, 3 Tbsp. cornstarch, 6 Tbsp cocoa, pinch of salt, 1 cup boiling water. Cook and stir until thick. Then add 3 Tbsp butter, and 1 tsp vanilla.
I made a double recipe for a 9 x 13 cake pan. Here is a picture of what was left after the party.
We also had a beautiful cake made and decorated by my grandson's girlfriend.
Since some of the kids had runny noses, and the rest of us didn't want spit on our cake, so I asked a young grandson to make a cake from play-dough to put the candles on. He got quite creative with it.

Now my mouth is watering!! The idea of the Play-doh cake is perfect - and he did a great job. It reminds me of a carrot cake with pistachio filling like my grandmother would make.
Yum. I have to watch it with the sugar, but if I were to splurge, this looks very satisfying . . . .

Hummm....Love the cakes!! That recipe for the icing though, is new to me.....
When I make chocolate icing, I use powered sugar....Recipe below:
(For double layer cake)
2 cups powder sugar
3 tablespoons Butter
2 tablespoon Hershey's Cocoa
1 teaspoon vanilla
1/4 cup half & half or canned milk
Put butter and Cocoa in sauce pan. Turn on to low heat, stir mixture constantly until butter is melted, and mixture is bubbling...
Pour into sugar, add vanilla and liquid and stir.....
This is a recipe, that you might want to add more liquid to, because it's a stiff icing, and not easy to spread, but it is delicious..
Adding more liquid will soften it, and make it more spreadable....

That "cake" for the candles is a great idea. I must remember that. We still have young ones around, too.
I like the play dough cake.
